OUR STORY
Co-Owners Tabitha and Dave founded La Noisette Bakery in 2013 after having both completed their culinary diplomas. Tabitha graduated from Fanshawe College, and Dave from the Cordon Bleu in Ottawa. Together they had a combination of more than a dozen years experience in the food industry.
They both knew they had something special to offer London and on June 26th 2014, officially opened their doors at La Noisette Bakery. In the years that followed, they developed a loyal clientele who returned again and again for their baked goods, including handmade croissants and La Noisette’s signature Bagel Bombs. Just before Covid hit in March 2020, they expanded into a production facility to handle the overflow of retail and wholesale orders they were now managing. With Covid keeping clients home they opened their online store which allowed clients curb side pick up and delivery options.
Today, Tabitha has a passion for classic desserts and pastry and an eye on the highest food quality standards. Dave and his team excel at production - hand shaping and baking breads, bagels, as well as a line of pastries, croissants and more, including vegan and gluten free options. They both contribute using their formal training, a lot of heart, and a ton of hard work.
In late summer 2020 La Noisette Bakery absorbed a boutique cake shop called Bake Shop Studio. They welcomed their talented cake decorator, Kate. They had an amazing 3 years of celebrating with customers through their wedding, birthday and all occassions cakes.
Tabitha and Dave have worked with leaders in the restaurant industry; they have seen what they like and what they’d change, and now are doing it their way.
More recently, in October 2023, La Noisette has switched to a wholesale and production model. Working with various retail partners throughout London and the surrounding area, they have extended their reach to allow more access and choice to their customers.
This means the coffee shop is now closed and cakes are no longer part of our menu. However they strive to continue growing and providing quality goods to local businesses.

“Real Food” is something we know you will appreciate. Plus, we use butter in everything - who can argue with that! Our sourdough bread has only four ingredients, the bread you may buy at the grocery store has thirty plus! Try ours, you’ll taste the diiffernce.
